Pumpkin Bread (Vegan & CBD Infused)

With the start of the fall season we felt it's appropriate ti share our famous pumpkin bread recipe but with a twist. This pumpkin bread will be completely vegan and infused with CBD tincture.



Wet Ingredients:

  • 1 TBS Ground Flaxseed

  • 2.5 TBS Water

  • 1 Cup Brown Sugar

  • 1 1/2 Cups Pumpkin Puree

  • 1/2 Cup Coconut Oil

  • 1/4 Cup Oat Milk

  • 1/2 Bottle Green Gold Organics CBD Tincture (1000MG)



Dry Ingredients:

  • 1 3/4 Cups Whole Wheat Flour

  • 1/4 Cup Sugar

  • 1 TSP Baking Soda

  • 1/2 TSP Baking Powder

  • 1/2 TSP Sea Salt

  • 3 TSP Cinnamon

  • 1/4 TSP Nutmeg

  • 1/4 TSP Cloves

  • 1/2 Cup Coconut Flakes


Instructions


  1. Preheat the oven to 350ºF and grease the loaf pan you will be using.

  2. In a small mixing bowl add the flaxseed and water, gently mix and set aside. This is will become "flax egg".

  3. In large mixing bowl add pumpkin, brown sugar, granulated sugar, coconut oil, flax egg, tincture and oat milk. Whisk until nice and smooth. Add flour, baking soda, baking powder, salt, cinnamon, nutmeg and cloves. Stir gently with a large spatula, just until everything is combined.

  4. Pour pumpkin bread mix into greased loaf pan and sprinkle coconut flakes on top.

  5. Bake for about 1 hour or until a toothpick comes out clean when poked into the center.

  6. Let cool, slice and enjoy!
